The Maple tree is one of Canada's national symbols and it's syrup is an iconic Canadian product. On a personal level, I have great pride in our hardworking Canadian farmers. This scene is from a family sugarbush farm in Eastern Ontario. In early spring, from about late February to early April, the freezing nights and warm days make the sap run. The horse team is heading out to gather sap from the tapped trees. Behind them, the sugar shack is steaming and ready for their return. It takes 40 litres of sap to produce 1 litre of syrup. Hard work and long hours make this sweet liquid gold.
